1.Vegetable Idli

2 cup idli batter

1/2 cup grated carrot

1/2 cup chopped beans

2 tbsp refined oil

1/2 tbsp cumin seeds

1/2 tbsp brown mustard seeds

Curry leaves

The required amount of salt

Preparation process:

Mix the idli batter with the cumin, brown mustard seeds and required an amount of salt. Greece the idli moulds with a bit of oil and pour the batter into the moulds then splutter the chopped vegetables as toppings and steam it for twenty minutes until idli becomes light and soft to touch.

Then finally serve tasty vegetable idli with coconut chutney.

2.Carrot Onion Uthappam

Idli batter-Required

1 grated carrot

1 chopped onion

1/2 tbsp pepper powder

Salt - required

Chopped ginger

1 tbsp refined oil

Curry leaves

Preparation process:

Mix the idly batter with a required amount of salt and then take a pan, heat it for five minutes pour some oil then pour the batter and spread it all over the pan, top the uthappam with the onion, carrot, chopped ginger, pepper powder and curry leaves. Drop the oil at the edges of the uthappam and cook it in a medium flame.

After a minute press the uthappam with the dipper and turn in to other until it becomes brownish gold colour in a medium flame and serve it with sambar.

3.Oats Upma

2 tbsp oil

1 cup rolled oats

1 cup of water

1 chopped onions

1 cup chopped vegetables(beans, carrots)

1 green chilli

finely chopped ginger

1/4 chana dal

1/4 cumin seeds

1/4 mustard seeds

2 tbsp cashew

1/2 teaspoon turmeric

A required amount of salt

coriander leaves for garnish

1 tbsp lemon juice

Preparation Process:

Dry roast oats in a pan and keep aside leave for 5 minutes until they cool, keep another pan and pour oil, after getting heat, add cumin and mustard seeds when they begin to crackle then add  chana dal and cashews after that add chopped onions, ginger, chilli and vegetables wait until it cooked then add water and mix it well next add required amount of salt and turmeric and after add dry roasted oat in the water then wait until it cooked then finally serve by garnishing with the coriander leaves and lemon juice.

4.Rava Pongal

1/2 cup rice or any millets

1/2 cup pesara pappu or moong dal

Finely chopped ginger

1/2 tsp cashew

1to 2 chillies

1/2 tsp cumin, jeera

Pinch of Hing for taste

1 tsp ghee

Pinch of turmeric

1 tsp crushed peppercorn

Curry leaves for garnish

preparation process:

Wash rice and dal and put in a pot or cooker pour water and required an amount of salt and leave up to 2 to 3 whistles. when the pressure goes out then open the lid and leave it off to get cool then mash the content to get runny.

Heat the pan with ghee add cashews until it turns to golden keep aside. Next add cumin, jeera and peppercorn. Allow them to splinter then add chilli, ginger, turmeric, and hing, next pour the content into the mashes runny Pongal content mix well and serve it with a tasty sambar or coconut chutney.

5.Ragi Dosa

1 Cup Ragi flour

1/2 Cup Rice flour

1/2 Cup Sour curd

2-3 finely chopped green chillies

1/2 Cup finely chopped onions

Coriander leaves for toppings

Preparation process:

Mix the ragi flour, rice flour, sour curds, salt and finely chopped green chillies and onions, add required amount of water to form a batter and keep aside for 2 hours. 

Keep the nonstick pan on the stove lightly grease it with oil and pour the ladle full of batter and spread it in a circular motion then garnish with coriander leaves wait until it cooks on one side then turn it into another side then serve with a coconut or tomato chutney.
