We all used to have ice-creams during summer to avoid the scorching heat. The children and we used to eat the ice-creams with chemicals. It may give relief for instance, but it may have a longterm effect by cold, cough and others. In those all ice-creams, we used to prefer the butterscotch the most. It is confectionery made by using butter and brown sugar, but these days many of them adding the chemical flavors which can affect health.



For butterscotch sauce:




How to prepare butterscotch sauce



Ingredients:



1/2 cup dark brown sugar
1/2 cup milk
1/2 tablespoon butter
1/2 tablespoon vanilla extract


Procedure:



1. Melt butter in a pot on medium heat.
2. Add milk and brown sugar.
3. Stir together and bring it to cool.
4. simmer for 5 minutes on a medium to low flame.
5. The sauce turns slightly thicker, pour the vanilla. Turn off the heat and let it cool.
6. The Butterscotch sauce becomes thick when it becomes cool. Store it in a dry, cool jar in the refrigerator. It is fresh up to 3-4 weeks.


For butterscotch ice-cream:




Ingredients:



1/2 tin condensed milk
1 1/2 cup whipped milk
1/2 tablespoon vanilla extract
2 tablespoon praline(optional)

Procedure:



1. Chill a large bowl and the whisk or the attachments of the hand mixer for 24 hours in the fridge.

2. Pour the chilled cream to the bowl.

3. Begin to whip on a low speed and then on medium speed.

4. The mixture turns frothy at the first stage and thick in the second stage.

5. whip until you see stiff peaks in the cream.

6. Add the condensed milk and the butterscotch sauce. You can set a little sauce for topping.


How to prepare butterscotch ice-cream at home


7. Gently stir until all of them are mixed well. Don't over stir as the cream may deflate.

8. Taste the ice-cream if you feel you want more sweet you can add more condensed milk and mix.

9. Drizzle some butterscotch sauce and sprinkle praline as desired.

10. Cover it with a cling wrap. Press it down to the mixture as it forms ice crystals.

11. Over and freeze overnight or until it becomes ice-cream.

12. Scoop the ice-creams to the bowls and enjoy the healthy ice-cream this summer.
